
Blueberry Muffins
These bakery-style Blueberry Muffins are topped with a buttery brown sugar streusel that makes everyone come back for seconds.

Preheat oven to 400 degrees. Prepare a muffin pan with cupcake liners. In a large bowl, sift together the flour, sugar, baking powder, and salt. Set aside.

In a medium bowl, whisk the eggs until smooth. Add the melted butter, milk, and vanilla, and whisk until combined. Add the egg mixture to the flour mixture and stir until combined. (Dough will be lumpy.) Fold in the blueberries.

To prepare the streusel topping, in a medium bowl combine the flour, brown sugar, granulated sugar, cinnamon, and salt. Using a pastry cutter, cut in the butter until the topping is crumbly and coarse.

Fill the prepared muffin cups with batter. Top each muffin with streusel topping, about 1 tablespoon each. Bake until a toothpick inserted in the center of a muffin comes out clean with a few crumbs attached, about 18 to 22 minutes. Cool the muffins on a rack for several minutes before removing from pan. Cool completely and store in an airtight container, up to 4 days.
